Fuelled by her Southern Tagalog roots, Chef Gel Salonga-Datu aims to provide top quality food and services for local clients and tourists by establishing Ted’s Kitchen and Aurora Filipino Cuisine in Santa Cruz, Laguna with her brother, Chef Day Salonga.
A financial trader-turned-baker, Chef Gel Salonga has quickly made a name for herself in the local pastry scene. From her commissary in Sta. Cruz, Laguna, she creates cakes and pastries that make use of premium and local ingredients and are baked fresh daily.
Recognized as one of the country’s up and coming pastry chefs, Chef Gel’s creations have been included in best desserts lists and featured in numerous magazines and broadsheets. Her Santa Cruz Bibingka Cheesecake received the People’s Choice Award at Ultimate Taste Test Pro Edition. Her Mango Kasuy Sansrival, Maja Blanca Cheesecake, Avocado Cheesecake and Brazo de Fernando have also been awarded as among the best desserts by Philippine Daily Inquirer.
As an advocacy, Chef Gel aims to promote the use of Laguna’s local, seasonal ingredients into her desserts. From Kesong Puti to Itlog na Pula, as well as seasonal fruits and berries like Lipote and Sampinit, using and promoting local has always been an integral part of Chef Gel’s baking. Through her advocacy, she aims to encourage local artisans to continue their craft while at the same time, showcasing the produce and culture of Laguna thru her annual food and heritage festival, Sa Pantalan Biyaheng Pangkatagalugan.
